Fall is here! First soup of the season: low fat Cheddar & Broccoli soup

For all my Gluten free vegan friends—> Eggplant tapas 

Ingredients: 

Eggplant, tomatos, garlic, fresh basil, olive oil, salt & pepper

1) Slice eggplant (with or without skin) into slices that are about 1/2 thick 

2) place flat on a greased cookie sheet

3) place 1-2 pieces of basil on top of each slice (depending on size of eggplant) 

4) drizzle a VERY light layer of olive oil and salt & pepper on top of eggplant

5) Place in a 400 degree oven for about 5 minutes 

6) While cooking, dice up tomatoes and garlic with a dash of salt and pepper

7) Take eggplant out of the oven and top with yummy garlic tomatoes! 

8) ENJOY!

This was a first, I made my own rendition of Shepard’s Pie:

Ground turkey 
Fresh sweet corn 
Carrots 
Peas 
Onions 
*sauté together in a cast iron, add 2 cups water once meat is cooked and add 2 chicken bullion cubes 
*top with whipped cheddar mashed potatoes.
*meanwhile fry thinly sliced potatoes in 3 Tbl spoons of vegetable oil until browned much like hash browns season with salt, pepper, garlic salt and a little chili pepper. 
*put hash browns on top of pie an shred Dubliner cheddar on top.
*Place whole pan in a 400 degree oven for 20 minutes.

Resulted in 3 very happy/full boys ;)
